  • 5 tbsp oil

  • 1 large onion peeled and chopped into rings

  • 1 whole chicken

  • 1 lemon

  • 1 tbsp paprika

  • 4 parsnips peeled and chopped into four

  • 1 tsp garlic crushed

  • 1 tbsp dried rosemary

  • 6 medium potatoes washed and chopped into four

  • 5 carrot peeled and chopped into four

  • 1 tbsp Dijon mustard


  1. Make a marinade with the oil, mustard, 1 rounded tsp of salt, good pinch of black pepper, garlic, paprika, juice and rind of a lemon and rosemary.
  2. Layer the onion into a roasting tray or dish then coat the chicken well with the marinade. Leave a little for the vegetables.
  3. Place the chicken on top of onions.
  4. Coat all the vegetables with the remaining marinade and place around the chicken.
  5. Cook at 200C/Gas Mark 6 for 25 minutes and then reduce to 170C/Gas Mark 3. Cover with foil sealing the tin firmly and cook for a further hour.

    I just love this roast hardly any dishes to wash, so quick to put together, minimum effort maximum taste.
