Pasta with spinach and sundried tomatoes

  • 1 tbsp olive oil

  • 3 handfuls spinach

  • 2 tsp red wine vinegar

  • 1 red pepper cut into strips

  • 60g sun-dried tomato paste

  • 200g pasta

  • 1 small red onion cut in half then sliced along the grain

  • 8 sun-dried tomatoes

  • 50g parmesan finely grated


  1. Fry the onion and pepper. Add red wine vinegar and cook on high heat for 1 minute to burn off acidity.
  2. Add sundried tomatoes, and several large dollops of sundried tomato paste. Loosen with water if too thick for your taste. Simmer on a low heat for a few minutes and then add spinach, turn off the heat and cover until the spinach starts to wilt.
  3. Mix sauce with cooked pasta and smother with Parmesan.

Handy Hint

If the sauce is to tart or tomatoey for you, stir in a dollop of philadelphia or ricotta, or even yoghurt to soften.
Stir in some pine nuts for a crunch.

    missed the first half out! i meant to say... ...fry onion/red pepper in olive oil for 5-10 mins til soft !!
