Spicy sweet potato soup

  • 1 splash vegetable oil

  • 1l vegetable stock

  • 1 large onion chopped

  • 2 medium white potato peeled and chopped into small pieces

  • 1 large sweet potato peeled and chopped into small pieces

  • 100g dried red lentil

  • 2 cloves garlic finely chopped

  • 2 tbsp tikka masala curry paste


  1. Cook the lentils in boiling water for 15 minutes. Drain and set aside.
  2. Fry the onion and garlic in the vegetable oil in a large pan for 5 minutes, or until the onion is translucent and is beginning to soften.
  3. Add the curry paste and potatoes to the mixture and cook for a further 5 minutes, making sure you stir continuously.
  4. Add the drained lentils and stock to the mixture. Stir well and cook over a medium heat for 30 minutes.
  5. Pour the mixture into a blender and blend until smooth.
  6. Serve immediately.

Handy Hint

If you prefer a chunkier texture to your soup, skip the blending and just mash the potatoes into the mixture and stir.
