Dairy-free mushroom stroganoff

  • 1 onion chopped

  • 1 tsp mixed spice

  • 400g coconut milk

  • 250g mushroom sliced

  • 1 1/2 yellow or orange pepper sliced

  • 1 clove garlic chopped


  1. Cook the onions and the peppers in a wok or frying-pan with a small amount of olive oil with the garlic for 5 minutes.
  2. Stir well, then add the mushrooms and cook until slightly golden.
  3. Add the rest of the ingredients and cook for 20-30 minutes until the sauce is thick and creamy.
  4. Serve with rice.

Handy Hint

I usually add chicken in with mine and it tastes great but not necessary.

    iv had to cut out dairy products since finding out my daughter has a milk allergy as im still breast feeding and i was really struggling with not being able to have any creamy food and found everything quite dry and boring, my parter thinks this tastes a little bit like korma (i think only because of the coconut milk) i love it, hope you enjoy!!
