  • 2 onion peeled and cut into chunks

  • 2 tbsp oil

  • 300ml chicken stock

  • 1/2 orange

  • 1 pinch cayenne pepper

  • 2 red pepper deseeded

  • 175ml dry white wine

  • 1 tin tomatoes

  • 2oz black olives

  • 2 cloves garlic

  • 4oz chorizo chopped into chunks

  • 4 chicken joints

  • 1 brown basmati rice

  • 1 tsp herbs


  1. Season the chicken & brown in the oil, in a large pot and then set aside.
  2. Brown the peppers and onions over a high heat for a few minutes.
  3. Add the chorizo & chopped garlic & fry together, then stir in the rice and make sure each grain is coated in oil.
  4. Add the wine, stock,tomatoes, herbs & cayenne.
  5. Bring to the boil & place the chicken, olives & orange slices on top.
  6. Place the lid on the pot and simmer gently for one hour.

    This is a good friends-round-for-dinner dish. It can be transferred to an oven-proof dish, Gas mark 4, 170c, in which case partially-cook the rice first. Make sure the rice stays under the liquid, with the chicken on top.
