Spaghetti carbonara

  • 400g spaghetti

  • 10 slices streaky bacon or one pack

  • 1 onions roughly chopped

  • 300ml creme fraiche not reduced fat - it can curdle!

  • 125ml Worcestershire sauce if you can spare it but not absolutely necessary

  • 1 handful Parmesan grated


  1. Boil the kettle then put water in a big pan. When water comes back to the boil, put the dried spaghetti, or other pasta, into the boiling water.
  2. In a frying pan, gently fry the chopped onion in the butter/oil, then cut the bacon up and add to the onion. Add freshly ground black pepper and once it is sizzling away add the white wine. Let the wine evaporate. Gently simmer for 10-12 minutes until spaghetti is ready.
  3. Turn off heat. Drain water from spaghetti/pasta. Transfer onion and bacon mixture into pan of pasta and stir then add the crème fraiche and stir together with the grated Parmesan cheese. Serve immediately.

Handy Hint

You can make this with beaten egg instead of the crème fraiche but there's more likelihood you'll end up with scrambled egg on spaghetti! The creamy end result with the crème fraiche is delicious!

    Very easy to make but does taste quite strongly of creme fraiche - will substitute with single cream next time

    Made this for dinner tonight, so easy! DS was eating with us so I put some peas in, lovely!. Went well with some peppery rocket cos it's quite rich.
