Easy one pot stew

  • 1 onion

  • 2 tbsp tomato puree

  • 2 parsnips

  • 2 bay leaves

  • 1 turnip

  • 100g peas

  • 2 stock pots (Knorr ones are gluten free)

  • 1/2 tsp rosemary

  • 1/2 tsp thyme

  • 3 potatoes

  • 1 pinch garlic

  • 1 pinch cayenne pepper

  • 1kg stewing steak

  • 6 carrot


  1. Chop up the root vegetables into cubes, add to casserole pot.
  2. Chop and fry an onion, add to casserole pot.
  3. Brown the meat on the hob add to casserole pot.
  4. Mix up 2 little tubs of beef stock, add between 800-1000ml of boiling water. Add the tomato puree to the stock and pour into casserole pot.
  5. Add all herbs and give it a good mix
  6. Cook for 3-5 hours in the oven at about 160C. You can stir every 1 hour if you want.
  7. 30 minutes before the end, add the thawed frozen peas. You can also add dumplings at this time.

Handy Hint

This is so simple, I am not big into cooking but I love this and it is full of veggie goodness. I make up a huge pot full and freeze half for another meal. All in the one pot so once it is cooking you can go get the kids from school and just relax for the afternoon, nothing else to put on….. bliss.

    Perfect for this time of year. I've made it 3 times already this autumn, adding whatever veg I have to hand. Pearl barley was a great addition.
