  • 2 tbsp tomato puree

  • 4 tbsp vegetable stock

  • 2 tbsp soft brown sugar

  • 1 lime juiced

  • 1 knob ginger around 1cm; finely chopped

  • 3 tbsp white wine vinegar

  • 2 tbsp dry sherry

  • 2 tbsp fresh orange juice

  • 2 cloves garlic finely chopped

  • 1 tsp cornflour

  • 2 carrot finely sliced

  • 2 tbsp light soy sauce

  • 4 spring onions shredded

  • 1 red chilli finely chopped


  1. Mix together first 9 ingredients (you can do this in advance and stick in fridge). In a non stick pan fry the garlic, ginger and chilli in 1 tsp spray oil. Cook for 1 min (add thin strips of chicken here if using or stir fry veg until cooked through).
  2. Add sauce, bring to boil and simmer for 2 mins
  3. Add carrot, spring onions (plus raw salmon chunks if using) and simmer for 2 mins. Serve with rice (I like wholemeal wild rice with this).

Handy Hint

Hot and sour sauce is delicious with salmon, chicken or mixed stir fry veg. Calories 313, Fat 4g.
