One pot easy salmon casserole

  • 1 onion chopped

  • 1 tsp cayenne pepper

  • 1 red pepper chopped

  • 700g salmon cut into bite-sized cubes

  • 2 tbsp sunflower oil

  • 20g coconut cream

  • 2 cloves garlic crushed

  • 1 tsp dried chilli flakes

  • 1 tin tomatoes


  1. Heat oil in casserole pan and cook the onion, garlic, cayenne, chillies and pepper until softened. To avoid burning the garlic, use a medium heat.
  2. Add tomatoes, seasoning and cook for further 2 minutes
  3. Increase the heat and gradually add creamed coconut, stirring all the time.
  4. Add the salmon and simmer for about 8-10 minutes or until the fish is cooked.

Handy Hint

Serve with crusty bread or rice.

    Sooo easy to do and gets lots of compliments every time. I have also used the basic recipe and substituted Quorn chicken pieces for the fish - also works well, but fry the Quorn pieces first to firm them up.
