Slow cooker fragrant chicken curry

  • 225g spinach shredded

  • 350ml chicken stock

  • 300g basmati rice (to serve)

  • 30ml mild curry powder

  • 1 tsp cumin seeds

  • 75g red lentils

  • 1 tbsp coriander chopped

  • 1 tsp coriander ground

  • 4 chicken thigh


  1. Rinse lentils, drain then put in slow cooker with ground coriander, curry powder, cumin seeds and stock.
  2. Cover and cook on high for 2 hours.
  3. Add chicken, pressing it down on a single layer
  4. Cover and cook for another 3 hours on high.
  5. Add spinach.
  6. Cover and cook for a further 30 mins till wilted.
  7. Stir in chopped coriander, season with salt and pepper and serve with rice.
