  • 2 tbsp olive oil

  • 2 tbsp flour

  • 1 eggs beaten

  • 300g cherry tomatoes

  • 250g ricotta

  • 1 handful fresh basil chopped

  • 1 handful breadcrumbs


  1. Put tomatoes into roasting dish, season with black pepper and salt and drizzle over the olive oil.
  2. Sprinkle over the breadcrumbs and three quarters of basil
  3. Mix together the flour, beaten egg and ricotta cheese, pour over tomatoes and add the rest of the basil.
  4. Cook for 20 mins or until mixture has set.

Handy Hint

Serve with green salad and crusty bread as a light supper, with great big glass of wine, or it works well as a starter, snack, or a vegetarian main.
