Red pepper stuffed with goats cheese

  • 2 red pepper

  • 150g goat's cheese

  • 1 bunch basil


  1. Slice the red peppers in half longways and scoop out the seeds.
  2. Slice and place enough goats cheese into the red pepper cavity to fill it
  3. Drizzle with olive oil and roast in the oven gas mark 4 for 20mins.
  4. Scatter fresh basil and serve on a bed of salad.
