  • 800g onion

  • 2 tbsp olive oil

  • 1 tsp caster sugar

  • 1 tbsp lime juice

  • 1 tsp sea salt

  • 3 tbsp coriander chopped

  • 4 red chilli


  1. Peel and thinly slice onions. Slice the chillies lengthwise and halve if needed.
  2. Heat olive oil in a large saucepan, add onion and chilli and sea salt.
  3. Fry for 40 minutes - stirring frequently until syrupy and darker in colour.
  4. Stir in lime juice and caster sugar.
  5. Transfer to a bowl and leave to cool. Then mix in the coriander.

Handy Hint

It is very fiery - not recommended for the weak!
This is delicious dolloped over curry or eaten with nan bread/poppadoms.

    this relish is divine, it can be eaten warm or cold. why not make some and try on your poppadoms?
