Courgette supreme pasta

  • 3 courgette

  • 4 tbsp extra virgin olive oil

  • 1 eggs

  • 1 freshly grated parmesan or use vegetarian hard cheese - to taste

  • 400g dried pasta

  • 1 small onion


  1. Wash and chop the courgettes into small chunks.
  2. Finely chop the onion and put it with the courgette into a large pan with the olive oil.
  3. Shallow fry for 5 minutes, then add half a cup of water and bring to a gentle simmer.
  4. Let cook for 10 minutes then add salt and pepper (and a pinch of chilli if liked).
  5. Meanwhile, fill a tall pan with boiling water, add some salt and cook the pasta in it.
  6. In a small bowl, beat up the egg and the Parmesan.
  7. Drain the pasta, put it back in the pan, then add the courgettes and the egg mixture.
  8. Keep on the hob until the egg is cooked through.

    This was easy and tasty - though quite sweet weirdly. It needed lots of salt and pepper. Nice with chopped ham maybe. Thanks for recipe trolleydolly.

    You can make the sauce in advance and then mix to the cooked pasta. This recipe is very succesful with both adults and children and it's very healthy, providing fibre, minerals, vitamins and good carbs.
