  • 1 tsp bicarbonate of soda (bread soda)

  • 1 tsp salt

  • 12oz wholemeal flour

  • 4oz plain white flour

  • 0.5 pints buttermilk 1/4 pint of yoghurt mixed with 1/4 pint of water

  1. Preheat the oven to 220C.
  2. Sift white flour, salt and bread soda, and mix thoroughly with wholemeal flour.
  3. Make a well in the centre and add most of the buttermilk/yoghurt mixture/sour milk. Working from the centre, mix with your hand adding more milk if necessary. The dough should be soft but not sticky.
  4. Turn out onto a floured board and knead lightly, just enough to shape into a round. Put onto a floured baking sheet and cut a deep cross over the top of the bread.
  5. Bake on the top shelf of the oven for 30/40 minutes or until a skewer comes out clean when inserted to the thickest part of the loaf.

Blimey I sent this in ages ago I didn't even know it was recipe of the week! In answer to your questions Normal bicarb of soda is what you use Don't be so lazy convert it yourself! I do at 200C in my fan oven

Not tried it yet as my scales are only in grams and kg (so much easier to visualise anyway as it's all divisible by 100). Can you repost in metric - we are in the 21st Century now!! And what is the cooking temp for a fan oven, 200C?

Hi, looks like a great "easy" recipe for Sodabread. I am a big 0 on baking though: could I just use "any" biocarbonate of soda or is there a special "Bread" Soda? thank you
