  • 2 tbsp milk

  • 1 tsp baking powder

  • 60g sugar

  • 120g flour

  • 1 lemon juice and zest

  • 3 eggs

  • 80g cornflour

  • 1 pineapple

  • 200g icing sugar

  • 6 amaretto biscuits


  1. Beat the egg yolks with half of the sugar then whisk the whites with the remaining sugar.
  2. Add the lemon zest, the flour, the cornflour, the baking powder, the juice of the lemon, the milk and stir it in gently.
  3. You need to reach a smooth consistency. Add extra milk if needed; pour the mixture into a greased round baking tin; crush the amaretti and put them over the mixture.
  4. Clean and cut the pineapple into slices and lay it over the mixture. Bake for 25-30 minutes.
  5. Sprinkle some icing sugar over it.
