Tuna and peanut risotto

  • 2 onion

  • 4 tbsp oil

  • 3 tbsp sugar

  • 2 tsp curry powder

  • 1 green pepper

  • 225g long grain rice

  • 200g salted peanuts

  • 2 tins tuna

  • 2 tbsp lemon juice

  • 450ml apple juice

  • 200g apples diced


  1. Cook rice in boiling water for 10 mins and drain thoroughly.
  2. Drain tuna and break into chunks. Heat oil in large saucepan and fry onion and pepper with curry powder for 5 mins.
  3. Grind most of the peanuts in a food blender and add to the pan along with the apple juice, salt, pepper, diced apple, lemon juice and sugar.
  4. Bring to the boil, add rice and tuna. Simmer uncovered for 10 mins, stirring frequently.
  5. Transfer to warmed serving dish and serve hot, sprinkled with a few extra peanuts.

Handy Hint

This will serve four. I halved the recipe and it's plenty for two. also, I only used a teaspoon of sugar, to taste really.
