Butternut squash soup

  • 1 medium onion

  • 1/4 pints milk

  • 1 medium butternut squash

  • 1/2 pints stock


  1. Peel and chop squash into chunks. Peel and roughly chop onion.
  2. Put the veg into a large saucepan with the stock, season and bring to the boil.
  3. Turn down and simmer for approx 30 mins, until squash is soft. Add milk and stir.
  4. Strain off liquid into a jug. Puree the squash and onion, and add back the liquid gradually until the desired consistency is reached.

    Made this today and added some cumin and coriander to it, my kids both ate it with no complaints at all. Very tasty, this is the first time I've used butternut squash too.

    Spice is nice in this soup. Try some cumin, ground coriander seed, coriander leaf and a little chilli or just a little curry powder to warm you up on a cold day

    This is a really simple, tasty and reasonably low calorie soup. My children love it because it's so sweet, and my parents love it because it's hearty and tasty. I'm sure you could add other veg to it as well to vary the flavour.
