  • 5 tbsp olive oil

  • 300ml milk

  • 1 salt

  • 1.2l chicken stock

  • 1 bay leaves

  • 50g flaked almonds

  • 175g ground almonds

  • 1 green food colouring

  • 2 tbsp cornflour

  • 1 small onion finely chopped

  • 150ml cream


  1. Soften the onion in 2 tablespoons of olive oil; don't brown it.
  2. Stir in the ground almonds, stock, bay leaf and salt. Cook gently for 30 minutes.
  3. Add cold milk to the cornflour gradually to mix smoothly. Stir this into the soup and cook for 5 minutes more, stirring frequently.
  4. Add the cream and adjust the seasoning.
  5. Remove the bayleaf and mix the soup in a blender. Pour it into a bowl and add just enough food colouring for an avocado shade of green (about 3 drops).
  6. Serve garnished with fried, chopped almonds scattered on top.
