  • 100g butter

  • 1/2 tsp ground allspice (or cinnamon or ginger as you like)

  • 3 tbsp honey

  • 1 eggs beaten

  • 30g glace cherries

  • 40g currants or sultanas

  • 200g plain flour

  • 1 splash milk


  1. Preheat oven to 180C/Gas Mark 4.
  2. Melt the honey and butter on a low heat in a saucepan. Sieve flour and spice together into it.
  3. Stir all in hot butter and honey, and add beaten egg. Add currants/sultanas and glacé cherries.
  4. If it's very dry, add some milk to form dough, and form into a ball. Wrap in cling film and leave in fridge to set for at least an hour.
  5. Roll out it into 1.5 cm on the lightly floured surface. (I tend to roll dough between two sheets of baking paper, much easier and less sticky.)
  6. Cut into shapes of occasion and bake it for 10 minutes until golden.
