Sweet potato and pea curry

  • 1 onion chopped

  • 2 tbsp oil

  • 200ml vegetable stock

  • 400ml coconut milk

  • 200g frozen peas

  • 3 sweet potatoes peeled and diced

  • 2 tbsp red thai curry paste


  1. Saute 1 chopped onion in 2 tbsp oil for 2-3 minutes or until softened.
  2. Add 2 tbsp red Thai curry paste and fry for 1 minute.
  3. Add 3 peeled diced sweet potatoes and coat in the mix.
  4. Pour in the coconut milk and vegetable stock and bring to boil.
  5. Simmer for 10-12 minutes, adding 200g frozen peas halfway through.

Handy Hint

Reduce Thai curry paste quantity if you don't want it too spicy.
