Beautiful beef casserole

  • 1 onion

  • 2 tbsp olive oil

  • 1 tsp brown sugar

  • 1 tbsp flour

  • 1 tsp balsamic vinegar

  • 1 pint stock (made from vegetable bouillon powder and hot water)

  • 1 cinnamon stick

  • 125ml red wine

  • 1 bay leaves

  • 500g organic beef cubed

  • 1 tsp provençale herbs

  • 2 carrot

  • 1 orange peel


  1. Mix the herbs with the flour and roll the cubed beef in the mixture.
  2. Heat the olive oil in a casserole dish on top of the oven and brown off the beef.
  3. Remove the beef and set aside.
  4. Chop and saute the onion and carrots in the oil and add the bay leaf.
  5. When softened, add the sugar and balsamic vinegar. Allow to caramelise the onions and carrots for a few minutes.
  6. Then add back the beef along with the red wine, enough vegetable stock to cover the beef, plus the fresh orange peel and cinnamon stick.
  7. Cover the casserole dish and place in the oven for 1.5 hours. Eat with rice or potatoes and a green vegetable.

Handy Hint

Using a heavy lidded iron casserole dish works best.
