  • 25ml creme de cacao

  • 5ml instant coffee

  • 250ml whipping cream

  • 3 eggs seperated

  • 100g plain chocolate


  1. Break chocolate and melt in a bowl over a pan of boiling water, having first smeared the inside of the bowl with a little melted butter. Don't stir more than is necessary.
  2. Using a whisk, beat egg yolks, liqueur and coffee powder. Add melted chocolate and beat well.
  3. Whisk the egg whites with a pinch of salt until stiff but not dry and using a metal spoon, fold in together with whipped cream.
  4. Keep folding until thoroughly combined then pour into 6 serving glasses and chill for at least 6 hours.

Handy Hint

I've also made this dessert with tia maria and irish whisky (not together). I think you could add whatever liquer you like.
