Chocolate orange cake

  • 10oz self-raising flour

  • 12oz caster sugar

  • 12oz unsalted butter

  • 2oz cocoa powder

  • 6 eggs

  • 2 tbsp fresh orange juice

  • 1 large orange grated zest of and segments reserved for decoration.

  • 1 bar of green and blacks orange chocolate

  • 2 tbsp marmalade


  1. Preheat oven to 180C.
  2. Grease two springform sponge cake tins approx 22cm in diameter.
  3. Measure out 12oz of butter and 12oz of sieved sugar into a mixing bowl. Cream together with an electric mixer then add 6 eggs one at a time, mixing in between.
  4. Add 10oz of sieved self-raising flour into the bowl and 2oz of cocoa powder. Mix well using the electric mixer. Add 2-4 tablespoons of fresh orange juice into the cake mix, again mixing with the electric mixer.
  5. Taste the mix to see if you are happy with the taste as well as the consistency before adding any more than 2 tablespoons.
  6. Finally add the grated zest, reserving a little for decoration.
  7. Divide the mixture between the two cake tins and cook in the ove for 20-30 minutes or until a skewer inserted comes out clean.
  8. Allow the cakes to cook out of the tins.
  9. Whilst cooling, heat some water in a saucepan and then place a bowl over the water so that the base of the bowl is just above the water. Continue to heat the water and break the chocolate bar into the bowl, stir until melted.
  10. Sandwich the cakes together with generous helping of marmalade then top the cake with the melted chocolate, reserve some to dip the segments of the orange used for it' zest then place these chocolate covered segments on top of the cake. 11. Once the chocolate has started to cool and set sprinkle with the remaining zest.
