  • 75g icing sugar

  • 125g dark chocolate

  • 2 tbsp cocoa powder

  • 50g desiccated coconut

  • 2 tbsp rum

  • 100g breadcrumbs (ideally cake crumbs if you have them)

  • 1 knob butter


  1. Melt butter and chocolate in a bowl over simmering water. Take from the heat and stir in rum, coconut, crumbs and 50g of icing sugar. Beat until combined.
  2. Roll into small balls and leave to set on baking paper.
  3. Sieve remaining icing sugar onto one plate and cocoa powder onto another. Roll half of the balls in each.

Handy Hint

Use white chocolate and coconut rum instead if you fancy.
