Ingredients

  • 1 splash balsamic vinegar

  • 1 tbsp dried oregano

  • 1 tbsp dried basil

  • 300g cherry tomatoes

  • 2 peppers

  • 10 sausages good quality

  • 250g mushrooms

  • 1 sprig fresh thyme

  • 1 sprig fresh rosemary

Method

  1. Mix all the ingredients (together with any soft veg that needs using up), except for the sausages, together in the roasting dish.
  2. Put the sausages on the top and rub a little oil on them. It should be quite a tight fit.
  3. Put in the oven at 160C for 40 minutes.
  4. Turn the sausages half way through cooking.
  5. Serve with couscous or mashed potato.
