Broccoli lemon chicken

  • 350g chicken breast sliced

  • 200ml chicken stock

  • 1/2 lemon zested

  • 1 tbsp honey or tsp caster sugar

  • 1 tbsp sunflower oil

  • 200g long stem broccoli

  • 2 cloves garlic crushed

  • 1 tsp cornflour check label to see if gluten-free

  • 1 handful roasted cashews


  1. Heat the oil and fry the chicken strips for a few minutes.
  2. Remove from pan and add garlic and broccoli (or additional seasoning).
  3. Stir-fry for a minute.
  4. Cover and cook until almost tender.
  5. Mix stock, cornflour and honey or sugar to make thick sauce.
  6. Tip the chicken into mixture and heat through.
  7. Add lemon zest and juice, plus cashews, for crunch.

    Made this this evening, needed a bit more honey, but otherwise was delish! and so easy, the addition of the cornflour makes a lovely thick glossy sauce. I also substituted green beans for broccoli. However, all plates were cleared and seconds were demanded !

    This is taken straight out of 101 one pot recipes. A book I highly recommend but felt it should be credited.
