  • 2 courgette cut into thin ribbons lengthwise with potato peeler

  • 2 tomatoes chopped up or 6 cherry tomatoes

  • 2 cloves garlic peeled and crushed

  • 8 ready made pastry (each)

  • 300ml creme fraiche

  • 130g smoked salmon with dill torn up (the one from Aldi is good)

  • 250g linguine gluten-free

  1. Cook the pasta according to the packet instructions remembering to add olive oil to the water as gluten free pasta tends to stick.
  2. Put 2 tablespoons of olive oil in a pan and saute the garlic and courgettes for 5 minutes.
  3. Add the prawns and saute for a further 5 minutes. Meanwhile drain the pasta and rinse with hot water.
  4. Lower the heat in the pan and add the salmon, the tomatoes and tub of creme fraiche.
  5. Warm for 5 minutes and then pour over pasta and toss. Season with black pepper and serve with fresh herbs.
