  • 115g butter or margarine

  • 1 tsp vanilla extract

  • 225g caster sugar

  • 90ml milk

  • 1/2 tsp salt

  • 1 tsp bicarb of soda

  • 2 eggs

  • 4 ripe bananas mashed

  • 285g plain flour

  • 1 tsp lemon juice


  1. Preheat oven to 180C/Gas Mark 4.
  2. Sift flour, bicarb and salt in a mixing bowl.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, mashed bananas, milk/lemon juice and vanilla extract to the butter and sugar mixture and mix well.
  5. Fold in the flour mixture.
  6. Grease a loaf tin and pour in the mixture.
  7. Bake for about an hour or until well risen and golden brown.
  8. Remove from the oven and cool in the tin for few minutes and then on a rack.

Handy Hint

I freeze half-eaten bananas or really ripe bananas that won't get eaten in time - these work really well in banana bread (leave them out to defrost a bit for half an hour before use).
