  • 55g butter

  • 1 tsp vanilla essence

  • 55g cocoa powder

  • 1 orange zested

  • 400g granulated sugar

  • 0.25 pints milk


  1. Slowly boil the milk in a heavy pan (le creuset is great) then add sugar, cocoa and butter and stir all the time.
  2. Bring to the boil and cover and boil for 2 minutes then uncover and boil for 15 minutes.
  3. Test by dropping small amount into cold water to form a solid ball or to 238-240F on thermometer.
  4. Take from heat, add zest and vanilla and leave for 5 minutes then beat until it loses gloss and comes thick and creamy.
  5. Put into a lined buttered tin.

Handy Hint

Get a bloke to beat it so your arm doesn't ache!
