  • 3 onion

  • 1 chicken

  • 1 lemon cut into wedges

  • 4 cloves garlic

  • 1 handful thyme

  • 150g plain yoghurt or Greek


  1. Stuff the chicken with half an onion, lemon wedges, garlic and thyme.
  2. Chop up the rest of the onions and put in a roasting tin with olive oil.
  3. Put the chicken in the roasting tin.
  4. Rub the chicken with salt and pepper.
  5. Coat the whole back of the chicken with yoghurt.
  6. Roast at 180C for a time appropriate to the size of chicken.

Handy Hint

The yogurt not only makes a delicious roasted skin, but also keeps keeps more moisture in than any other roasting method I know. If you burn the top, just throw the yoghurt crust away. The chicken will still be delicious.
