Chocolate and pear crumble

  • 175g butter chilled and diced

  • 50g cocoa powder

  • 100g golden caster sugar plus 2 extra tbsp (ordinary will be ok too)

  • 1kg pear peeled, cored and quartered

  • 100g plain flour plus 1 extra tbsp

  • 100g ground almonds

  • 50g dark chocolate chips


  1. Put 100g flour, 100g sugar and the butter in a bowl and rub in by hand or by processor. It will be quite chunky as there's quite a bit of fat in there! Fold in the choc chips.
  2. Put the pears into a suitable size dish (about 2 litre). If you have it squeeze a bit of lemon or use some from a bottle and mix in with the pears, this stops them from browning. Then, toss the pears with the extra tablespoon of flour and 2 tablespoons of sugar.
  3. Scatter the crumble mix over and bake in the oven at about 200C/180C fan/Gas Mark 6 for about 35 minutes, maybe a little more. The top should be quite crisp but not burnt. Leave to cool for at least 15 minutes - the difficult bit!

    Original recipe (in a You mag) I saw served with chocolate custard but seemed best with vanilla ice cream. Disappears (get it) quite quickly!!
