  • 200g self-raising flour

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 230g sugar

  • 2 tbsp cocoa powder

  • 2 eggs beaten with 4 tbsp evaporated milk and 5 tbsp of water.

  • 115g margarine


  1. Preheat the oven to 180C. Sift the flour, sugar, salt and cocoa together in a bowl.
  2. Then, rub in the margarine until it resembles fine breadcrumbs. Stir in the egg mixture and the vanilla extract until well blended.
  3. Pour into a cake tin and bake on the middle shelf of the oven for 40 minutes.

Handy Hint

We always have this for birthdays, iced with milk chocolate. Very squidgy and yummy.
