  • 1 tsp brown sugar

  • 1 lime juiced

  • 1 red onion

  • 2 ripe mangoes

  • 1 medium red pepper

  • 1 bunch coriander leaves only

  • 1 piece of fresh ginger peeled and very finely chopped (about 0.25 inch)

  • 1 bunch mint leaves only


  1. Peel and dice the mangoes and onion fairly finely, and place in a bowl.
  2. Remove the seeds and finely chop the pepper, add to the bowl.
  3. Chop the coriander and mint leaves, add to the bowl.
  4. Peel and very finely chop the ginger, add to the bowl with the brown sugar.
  5. Squeeze over with the lime juice and stir well to combine.

    You can make this in advance but is best eaten fresh. Goes well with fish.
