  • 1/2 tsp baking powder

  • 1 tsp vanilla essence

  • 100g runny honey

  • 100g golden caster sugar

  • 6 medium eggs

  • 200g ground almonds

  • 3 ripe bananas peeled and roughly chopped


  1. Preheat the oven to 200C/Gas Mark 6, grease and line a 20cm (8 inch) cake tin with baking paper.
  2. Place bananas in a food processor and blitz until smooth.
  3. Add all of the remaining ingredients and blend until mixed.
  4. Put the mixture into the cake tin and bake for 35-40 minutes.

    This was a very simple recipe that my 7 year old was able to make by herself. It produces a dense moist cake with a lovely subtle banana and honey taste. Its not incredibly sweet and is awesome with custard. Great way to use up ripe bananas. Also suitable for coeliacs if you use GF baking powder.
