Frozen cook ahead chocolate mousse slice

  • 4oz icing sugar sieved

  • 8oz unsalted butter

  • 1.5oz cocoa powder

  • 5 eggs separated

  • 8oz plain chocolate (posh)


  1. Melt butter and chocolate together in bowl over hot water.
  2. Beat in cocoa and half of the icing sugar (it goes glossy).
  3. Cool for 5 mins - do not lick it - then add egg yolks stirring all the time.
  4. Whisk the egg whites until firm, add remaining icing sugar to egg whites.
  5. Fold the egg whites into the choc mixture.
  6. Pour the mixture into ramekins or a foil lined loaf tin.
  7. Cover and place in the freezer until it is set.

    I wanted to add (but I think you deleted MUMSNET) that you should remove from freezer when your guests arrive. Or if you are going to a bbq just carry it around. It will be kind of part frozen then when you get there but moussey on the edges love Cod

    Made this for my parents, myself and the DCs. Everyone wanted more - it was fantastic. I only had marge so used that instead of butter and it was still lovely.
