Broccoli soup

  • 2 tbsp olive oil

  • 1l vegetable stock

  • 550g broccoli separated into florets

  • 150g emmental grated

  • 1 bunch spring onions chopped into thin rings

  • 100g creme fraiche


  1. Heat the oil in a saucepan and add the broccoli and onions. Cover and steam for about 10 minutes over a medium heat.
  2. Add the vegetable stock and leave to simmer for 10 minutes.
  3. Take the saucepan off the heat and mash the vegetables into a puree with a potato masher or a hand held food blender.
  4. Add creme fraiche and stir well.
  5. Season with salt and pepper.
  6. Return to heat and add the grated Emmental, stirring frequently. Do not allow to boil as the creme fraiche will split.
  7. Serve with a baguette.

Handy Hint

Remember to stir at the end or the cheese will stick to the base of the pot.

    Broccoli is a great ingredient when you need to get better after feeling under the weather! This would make a great addition to our Soup of the Month competition over on the New Covent Garden Soup site! :)
