Homemade chicken fajitas

  • 1 splash olive oil

  • 1 tsp brown sugar

  • 2 chicken breast

  • 1 red onion

  • 2 pepper

  • 1 tsp paprika

  • 2 white onion

  • 1 tbsp white vinegar

  • 1 pinch chilli flakes (to taste)

  • 1 tbsp cumin seeds

  • 4 cloves garlic

  • 1/2 tsp coriander seeds

  • 1 tsp all spice


  1. Wrap chicken breasts in cling film and batter with meat hammer (or something similar) until they're flat. Chop up into small pieces and throw in bowl with the white vinegar.
  2. Grind the spices, sugar, garlic and salt with mortar and pestle (I let my little ones help with this.) and add into bowl with chicken.
  3. Chop peppers roughly, fry in olive oil on a high heat.
  4. After 4-6 minutes add the onions (again, rougly chopped.)
  5. After a minute add the chicken pieces.
  6. Cook for a couple of mins, as the chicken pieces should be small, and don't need much cooking.
  7. Check to make sure the chicken is cooked through, then throw the lot into a bowl and serve with tortillas.

Handy Hint

This recipe makes a little chicken go a long way. We bulk out with cheese and yogurt and salad - also helps counteract the hotness for the kids. But our two are toddlers, so might have to stretch to three chicken breasts soon.

    Just did this for lunch with my four year old and it was brilliant. He even ate the peppers which shocked me! Tastes lovely too.
