Courgette muffins

  • 150g self-raising flour

  • 150g courgette grated

  • 1 pinch mustard powder (to taste)

  • 1 handful ham (or pancetta) finely chopped (optional)

  • 2 eggs

  • 150g strong cheddar cheese grated

  • 200ml whole milk

  • 150g plain flour

  • 3 spring onions chopped finely

  • 2 tsp baking powder


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Sift together the dry ingredients and stir in the grated cheese and season with salt, pepper and a little mustard powder to taste. Beat the eggs and milk together and stir into the flour mix. Gently stir in the courgette and the spring onion, and the ham/pancetta if using.
  3. Spoon the mix into muffin cases or greased tin - this is enough for 12. Bake for approx 20-25 minutes.

Handy Hint

If you are using paper cases, they can stick a bit. Silicon cases are good (or you can spoon the mix directly into the pans if you have a silicon muffin tray).
