  • 1/2 tsp brown sugar

  • 1/2 tsp salt

  • 1 1/2 tbsp vegetable oil

  • 1 large onion chopped

  • 1 tsp ground allspice

  • 1/2 tsp ground ginger

  • 1 red pepper

  • 1 tsp dried thyme

  • 1/4 tsp ground nutmeg

  • 3 cloves garlic chopped

  • 3 skinless and boneless chicken breasts boneless chicken breasts

  • 4 shallots chopped

  • 4 limes juiced

  • 1 tsp ground black pepper

  • 115ml water


  1. Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
  2. In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil.
  3. Blend well, then mix in onions, shallots, garlic and red peppers until almost smooth.
  4. Pour the blended marinade mixture into bowl with chicken. Cover and marinate in the refrigerator at least 2 hours.
  5. Place marinated chicken on a baking tray and place in oven.
  6. Cook at 180c , turn frequently and bast with all the remainder of the marinade until cooked to desired done-ness , around 40 to 60 minutes.

Handy Hint

For smaller children, cut the chicken into smaller cubes.
Can be left to marinade longer for a stronger flavour
