  • 1 onion chopped

  • 2 tbsp olive oil

  • 1/2 pints chicken stock

  • 1 1/2lb pork fillet trimmed and cubed

  • 3oz stoneless no-soak prunes

  • 3 apples dessert or small cooking


  1. Heat the oil in heavy-bottomed pan.
  2. Brown the onion, then the pork.
  3. Transfer to a casserole dish.
  4. Add prunes, stock, apple slices and season.
  5. Cover closely and cook in oven at 180C for one hour, or until pork is tender. Serve with rice or baked potatoes and a green vegetable.

Handy Hint

Can be blitzed in pressure cooker if time is v. short.

    Hoo HA! It all caramellises into a fantastic sauce! I used apricots as that was all I had and it was a big unctuous hit. So quick to do as well. A keeper.

    This seems to work well for adults and children: the sweetness of the fruit and pork blends nicely in the cooking. Leave the prunes in large-ish chunks so you can fish them out if you meet a refusal to eat "those brown squashy things".
