  • 1 onion diced

  • 1 tsp sugar

  • 2 tins chopped tomato

  • 450ml chicken or vegetable stock

  • 1 tsp dried basil

  • 2 cloves garlic crushed

  • 2 tsp dried Italian seasoning

  • 2 tsp Worcestershire sauce

  • 1 splash red or white wine (optional)


  1. Fry the onion and garlic together until soft but not browned.
  2. Add the tomatoes, Worcestershire sauce, seasoning, sugar and stock and heat on medium to high for 10 minutes, stirring very occasionally.
  3. Uncover and increase heat further to reduce sauce to desired consistency stirring every now and again. This should take a further 5 minutes or so.
