Pesto cheese straws

  • 1 red pepper roasted

  • 3 tbsp basil pesto

  • 2 sheets puff pastry

  • 110g grated Parmesan (plus extra for sprinkling)


  1. Thaw puff pastry, and on a flour-dusted worktop, lay one sheet of pastry on a parchment lined baking sheet. Spread pesto thinly over pastry.
  2. Spread a copious amount of cheese over pesto. Cut pepper into small bits and scatter over cheese.
  3. Lay second sheet of pastry over top and press it down firmly. Slice into thin strips and twist into corkscrews and place on baking sheet.
  4. Sprinkle cheese over tops of twists.
  5. Bake for 15 minutes at 200C. Allow to cool and serve.

Handy Hint

Don't overdo it on the pesto. It will taste too strongly and will seep out of the edges of the twists. Dry the roasted peppers on paper toweling before adding, the liquid in them makes the pastry a soggy mess. More = better with cheese!
