  • 115g butter melted

  • 2 egg yolk

  • 1 tbsp white wine vinegar

  • 1 tbsp lemon juice


  1. Blitz 2 large egg yolks in a blender. Add the white wine vinegar and lemon juice and blitz again.
  2. Melt the butter until just bubbling. With the blender running, slowly add the butter.
  3. Eat immediately.

Handy Hint

Fab with asparagus, salmon, or chicken. With poached eggs and bacon is the best ever breakfast.
