Broccolli and blue cheese soup

  • 1 pint chicken stock or vegetable

  • 1 stick celery finely chopped

  • 1 large head of broccoli (plus any other green veg you might have)

  • 2 cloves garlic finely chopped or crushed

  • 1 small onion finely chopped

  • 50g blue cheese


  1. In a large saucepan, gently saute onion, garlic and celery in butter and a dot of oil, until soft.
  2. Add the vegetables and saute for a couple of minutes.
  3. Add about a pint or so of stock.
  4. Bring briefly to the boil, then simmer gently for 20 minutes or until the vegetables are soft.
  5. Allow to cool slightly, then whizz with a hand blender.
  6. Add about 50g of blue cheese, stir to melt.
  7. Season and add more cheese if necessary.
