  • 500g caster sugar

  • 1 pinch salt

  • 8 large egg white

  • 1 tsp rose water (optional)

  • 2 tsp vinegar

  • 1 tbsp cornflour

  • 150ml cream

  • 1 handful fruit (to go on top)


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Line a baking tray with baking paper and draw a 20cm circle on it, you could draw round a dinner plate.
  3. Beat egg whites and salt together until they peak.
  4. Beat in the sugar a spoonful at a time until the meringue is stiff and shiny.
  5. Sprinkle cornflour, vinegar and rosewater over meringue and fold in lightly.
  6. Spoon the mixture onto the baking tray within the circle, flatten the top and smooth the sides.
    Put in the oven and immediately reduce the heat to 150C/Gas Mark 2.
  7. Cook for 1 3/4 hours. Turn off the oven and leave the pavlova in there to cool completely or, if you have an electric oven, open the door to let it cool.
  8. Whip the cream and top the pavlova with cream and any fruit you like.
