Basic blueberry muffins

  • 340g self-raising flour

  • 2 eggs

  • 125g melted unsalted butter

  • 120ml breast milk or formula

  • 115g blueberries

  • 1 pinch of bicarbonate of soda

  • 1 unsweetened grape juice for babies (to taste)


  1. Preheat the oven to 180C.
  2. Sieve the flour and bicarbonate of soda then add the wet ingredients and beat until just mixed.
  3. Add the blueberries and stir.
  4. Pour into the muffin tray (makes about 24) and bake for 10/15 minutes until skewer comes out clean.

Handy Hint

Although they look and taste like Yorkshire puddings with blueberries my ds (8months) loves them! Good to freeze and defrost as needed.
