Thai beef salad

  • 1 lime juiced

  • 4 tbsp soy sauce

  • 1 small lettuce

  • 1 bunch coriander chopped

  • 1 cucumber

  • 1 bunch mint some chopped and some torn

  • 3 spring onions finely sliced

  • 1 pinch brown sugar

  • 1 red chilli half chopped and half sliced (large and mild)

  • 1 handful rice noodles cooked

  • 250g steak


  1. Rub the steak with a little olive oil, some salt and the chopped chilli and cook according to taste, being sure not to overcook it. Set aside to cool slightly.
  2. Mix the lettuce leaves and noodles and add roughly torn mint leaves, cucumber and spring onions.
  3. Mix the dressing by combining the lime juice, soy sauce, chopped coriander, chopped mint and sugar and shake/stir well.
  4. Slice the beef slices thinly and lay on top of the salad.
  5. Pour over the sauce, scatter the sliced chillis and sesame seeds over the top.

Handy Hint

You can use left over roast beef for this instead of the steak.

    This is a delicious way to get a little red meat of high quality into you without spending too much. Very tasty and works equally well for a small group of friends at lunch as it does for dinner with just you and DP.
