Really terrific oatmeal cookies

  • 250g butter

  • 1 tsp vanilla essence

  • 1 tsp cinnamon

  • 1 eggs beaten

  • 75g light brown muscovado sugar

  • 1 tsp bicarb soda

  • 150g granulated sugar

  • 135g rolled oats

  • 190g plain flour (you can make this wholemeal if you prefer)

  • 75g raisins


  1. Cream together butter and both sugars, then add the beaten egg.
  2. Sift flour, bicarb and cinnamon together and stir into butter mixture. Stir in oats and raisins.
  3. Chill mixture for an hour and then put walnut sized pieces, spaced out well, on a buttered baking tray.
  4. Bake for 10 minutes at 180C.

Handy Hint

You can also make a fat sausage of the dough and cut slices off it to bake, if you prefer properly round cookies. The dough freezes really well too, so make double and put some in the freezer for another time.

    This makes a great, crispy on the outside, chewy in the middle cookie and has been a favourite in our family for many years.
