  • 2 tbsp mayonnaise

  • 1/2 red pepper finely chopped

  • 1 handful sweetcorn optional

  • 1 eggs

  • 2 spring onions or 1 small onion, finely chopped

  • 1 tin tuna

  • 1 handful breadcrumbs optional


  1. Cover a plate with some cling-film for you to place the patties on before you cook them.
  2. Put the oil on to heat up in a large frying pan.
  3. Break up the tuna in a bowl, then add in the egg and vegetables and mix well. Add a squeeze of mayonnaise and mix again. If the mixture seems too wet, add a small handful of breadcrumbs or a little flour (but it should be pretty damp).
  4. With damp hands, fashion the mix into small balls (about golf ball size), and gently squish each one into a fat patty. Put them on the cling-filmed plate to stop them sticking.
  5. When the oil is hot, fry in batches of 5 or 6 for about 2 minutes on each side.
  6. Blot on kitchen paper before serving.

Handy Hint

These freeze really well and can be re-heated in the microwave or oven.
